Diabetes is a syndrome characterized by disordered metabolism that is caused by hereditary and environmental factors. To keep the level of blood glucose under control, proper diet is necessary. Here are some healthy recipes for diabetics.

Healthy recipes for diabetics include diabetic foods, such as fish, fruits, lean meats, non-starchy vegetables and grains. These foods help in lowering the blood pressure as well as the sugar level of a diabetic. The body of a diabetic does not produce enough insulin to manage the blood sugar level. So, he/ she should maintain a proper diet, which is high in fiber content and low in fats. Fruits that are low in sugar content, such as banana, apple, orange and guava are good for the health of a diabetic. A healthy diabetic-diet includes proper amount of carbohydrates, fats and proteins. However, among all these, carbohydrates have the greatest influence on the blood sugar level. So, a low-carb diet is an ideal diet plan for a diabetic. Fatty foods such as butter, chicken fry, cheese, and oil are harmful for a diabetic patient. If you are suffering from diabetes, you should avoid these foods. Instead of these fatty foods, consume grilled, baked, boiled or steamed food. Let’s take a look into some mouth-watering recipes for diabetics. 

Fresh Herb and Vegetable Omelet 

This recipe can be included in the breakfast menu of a diabetic. It provides a low-carb and low-fat diet with the essential nutrients for a diabetic. 

Ingredients 

Egg whites: 8 

Fat free milk: ¾ cup 

Fresh minced basil: 1 tbsp 

Fresh minced rosemary: 1 tbsp 

Fresh minced chives: 2 tbsp 

Fresh minced parsley: 1 tbsp 

Olive oil: 1 tbsp 

Red bell peppers, diced: 1 cup 

Fresh sliced mushrooms: 1 cup 

Sliced onions: 1 cup 

Minced garlic: 2 cloves 

Breads without crust: 4 slices 

Scallions: 1 cup 

Low fat cottage cheese: 1 cup 

Preparation 

Preheat the oven up to 350 degrees F. Beat the egg whites in a bowl and keep aside. Heat olive oil in a skillet over medium heat. Saute peppers, mushrooms, scallions and garlic for four minutes. Keep the bread slices in a large casserole dish and add the remaining ingredients. Pour mixture of eggs on the bread. Then add all the cooked vegetables. Bake for half an hour until the omelet puffs up and appears set. 

Green Beans with Almonds 

Green beans with lemon and dill is a nutritious recipe with a delightful taste. This tempting dish can satisfy a diabetic’s appetite very well. If you are suffering from diabetes, enjoy this recipe with a mouth-watering nutty crunch. 

Ingredients 

Green beans: 250 g 

Water: 2 tbsp 

Butter: 1 tbsp 

Salt and pepper: according to taste 

Toasted almonds: 1/4 cup 

Preparation 

First break the ends of the beans into two-inch pieces. Keep the beans in a saucepan and add water, onion, garlic, salt and pepper. Put a cover on the saucepan and boil it. Drain it. Pour butter and toss so that the butter melts. Top it with toasted almonds and serve. 

Sugar-Free Pecan Pie 

Ingredients 

Eggs: 2 

Skim milk: 3/4 cup 

Water: 1/3 cup 

Granular fructose: 2/3 cup 

Sugar-free vanilla pudding (not instant): 0.8 ounce 

1 unbaked pie shell: 9-inch 

Chopped pecans: 1/4 cup 

Grape-Nuts cereal: 1/2 cup 

Preparation 

Preheat oven to 350° F. Mix water with fructose and boil over low heat for 5 minutes and keep it to cool. Add dry pudding into fructose mixture and mix with skim milk and eggs. Mix all ingredients well. Then, pour the mixture into pie shell, sprinkle pecans and grape-nuts on top and bake for 30 minutes, until the top is firmly set. Cut it after one or two hours.
